Oniony Corn Spoon Bread

I can't take credit for this dish.  My good friend Ralph made this for Thanksgiving when I was at his home and fell in love with it.  Its very easy to make but tastes amazing.  I begged him for leftovers to bring home at the end of the meal.

Oniony Corn Spoon Bread

1 can cream style corn
1 can Mexican style corn
1 8.5 oz package of corn muffin mix
1 cup sour cream
2 T. butter, melted
1 egg
1 1/3 cups French Fried Onions
1/2 cup cheddar cheese, shredded

Preheat oven to 350 degrees.

Combine both corns, muffin mix, sour cream, butter, egg, and 2/3 cups of the fried onions.  Pour mixture into a greased 2 qt shallow baking dish.

Bake for 40 minutes or until the mixture is set.  Top with the cheese and remaining fried onions and bake 5 minutes longer, until golden.  Serve hot.
