Peach Cobbler

I have had lots of peach cobbler in my life growing up in the South and have worked hard to make the perfect cobbler recipe. Of course I love some good Georgia peaches but after all of my time living in Colorado I have fallen in love with Palisad peaches grown on the Western Slope of Colorado and they make a great cobbler. The first few times you make this recipe it seems time consuming but I promise if you make it enough it goes very quickly.

Peach Cobbler

8 fresh peaches - peeled, pitted and sliced into thin wedges
1/4 cup white sugar
1/4 cup brown sugar
1/4 t. ground cinnamon
1/8 t. ground nutmeg
1 t. fresh lemon juice
2 t. cornstarch
1 cup all-purpose flour
1/4 cup white sugar
1/4 cup brown sugar
1 t baking powder
1/2 t. salt
6 T. unsalted butter, chilled and cut into small pieces
1/4 cup boiling water
3 T. white sugar
1 t. ground cinnamon

Preheat oven to 425 degrees F (220 degrees C).

To easily peel the peaches first boil a large pot of water on high heat. Prepare a large pan with ice and water in the sink. When the water is boiling and the ice water is ready plunge the peaches into the boiling water for 30-60 seconds. The riper they are the less time they will need. Immediately remove from the boiling water and plunge into the ice water to stop the cooking process. Use a knife and grab the peel between your finger and the knife and the peeling should slip right off. Peel all peaches and then cut in half and remove the pit and slice.

In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.

Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.

Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle entire cobbler with the sugar and cinnamon. Bake until topping is golden, about 30 minutes.

  1. This is one of my favorite desserts. It's such a delicious way to use peaches. I've been learning to cook with peaches too and recently made some peach jam. http://sweet-as-sugar-cookies.blogspot.com/2010/09/peach-jam.html
